I am not sure about you but, I almost start to drool when I see foods with this beautiful, intense color. How many foods are really blue or purple – not many. I find them to be so appealing and so very appetizing. I get the same feeling when I make beet soup. The deep pink rose color is so beautiful that I swoon over it before I eat it – and even while eating it. (Maybe this is TMI…sorry 🙂 )

I served this salad dressing with a basic salad of mixed greens – romaine lettuce, spinach and wild grape leaves – tomatoes, cucumbers, red onions and topped it with a bit of goat cheese. You could even add a few blue grapes to the salad. Strawberries or blueberries would also be a nice addition to this sweet garden salad.

I would have added some whole blue grapes to this salad but, in my home, blue grapes never last long. Sadly, there were none left when I made the salad.

Blue Grape Salad Dressing
Make this very simple blue grape salad dressing while blue grapes are in season. This sweet dressing pairs perfectly with a salad which includes some wild grape leaves.
Ingredients
- 1 cup blue grapes
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1-2 tbsp olive oil
Instructions

In Vitamix or other power blender, blend the blue grapes, honey and apple cider vinegar until smooth.

On low speed, slowly add the olive oil until emulsified.

Serve on salad with wild grape leaves greens, and goat cheese (optional).
Recipe Notes
Use as much or as little olive oil as you like, depending on the consistency you like.
